Great Snack Mix

I have to share this great snack idea! I have had this recipe for a while, but just thought about it yesterday and made it up...yum! So, I thought that I'd share it! Before we moved I bought about 12 boxes of Quaker Oatmeal Squares cereal...my whole family LOVES that cereal! Anyway, I am sad to report that we're down to the last 3 boxes...can't wait until we have some company from the states to bring us a few more boxes:)! Anyway, this is a great snack to have around.

Honey-Nut Snack Mix
4 c Quaker Oatmeal Squares cereal (regular or cinnamon)
2 c quick cooking oats
1 c chopped pecans or cashews (optional)
1/4 t salt
1 1/2 t cinnamon
1/2 c butter
1/2 c brown sugar
1/2 c honey
6 oz. crasins
Combine the first 5 ingredients (all dry) and set aside. Stir butter, sugar and honey in a small pan over low heat, until the sugar is dissolved. Pour butter mixture over the cereal and stir to coat. Spread in a single layer on a foil-lined cookie sheet. Bake at 325 for 20 mintues. Stir the cereal around and add the crasins and cook for an additional 5-10 minutes-until cereal is crunchy. Remove from oven and cool for just a minute or two on the cookie sheet. After a couple of minutes (if you wait too long it is a pain to remove the cereal from the foil!), dump mixture onto wax paper to cool completely. Store in an airtight container. And this is even great in milk....love it!!:)

Enjoy! Happy Snacking!
